We cook a porcupine using primitive technology in an underground earth oven, or hangi. This is a demonstration in primitive cooking as done by our early ancestors. We pluck the porcupine of all it's quills then wrap it up in burdock before lowering it into the earth to cook overnight. We combine our wild game with other wild foods including leeks, pestled corn meal, raspberries and maple syrup. My Gear
